The Flora Butcher
Chef David Raines, an internationally celebrated chef, originally settled in the area for his position with Seafood R’evolution. Before his work in Ridgeland, Raines studied in Italy, Denmark, Australia, and Japan.
He earned a degree from Johnson & Wales, a prestigious culinary school. He gained experience at Emeril Lagasse’s Nola in New Orleans and Rene Redzepi’s Noma in Denmark. He also worked at Restaurant R’evolution in New Orleans.
Raines developed an interest in the preparation of fine quality meats while working at Club Alliance in Japan. His interest soon grew into a passion.
Upon his return to the United States, Raines convinced his father, the longtime owner of a natural beef farm, to specialize in Wagyu cattle. The farm is now one of the largest producers in the area.
Chef Raines opened the Flora Butcher in 2016.
Check out the Madison County Magazine for the Butcher’s Block, where Chef David Raines shares a number of recipes for every occasion.
